Horse Meat Burger Recipe
Mel yesterday says "The number of people looking for horse recipes really disturbs me." Which I found interesting, and then I thought, I should make one to finish off my recipe week here at Greensboring. It of course tastes equally well with ground beef. No I haven't tried it with horse meat yet, but I have tried it with deer. Poor Bambi. Long Story, and we won't get into that.

Whats really scary Mel, is in Japan the horse meat is called Bassahi, and annually more than 20,000 tons of imported US & Canadian Horse meat find their way to dinner plates. New facts to me of course, but somehow less upsetting than the American habit of eating rabbit.
NY TIMES - Berlin, July 23 1905 - The considerable increase in the prices of beef, mutton, and pork throughout the empire gives occasion to the trade organ of the German butchers to draw attention to the ever-increasing use of horseflesh as an article of diet. Horseflesh is more free from parasites than beef and pork, and richer in nutrient. It is only sentiment (says the trade journal) which leads so many persons to object to it. Horseflesh dealers are unable to execute all the orders which reach them.
In Berlin there are 200 slaughterhouses for horses, and in the suburbs fifty, employing about 1,000 men. The Berlin municipality intends shortly to provide a large central slaughter house. One of Hamburg's best known products is horseflesh sausages. The industry has already been in existence for fifty years. A considerable quantity of these sausages, it might be mentioned, are exported as beef sausages. Probably 6,000 horses are slaughtered every year in Hamburg for food. Not long ago in Berlin the owner of a certain restaurant invited about fifty of his friends to a banquet, at which dishes of beef and horseflesh were served, and only six of those present were able to distinguish between the roast beef and the roast horse.

Restaurant Style Sesame Seed Hamburger Buns
1 LB Ground Horse Meat
Mayonnaise
Fresh Sliced Mushrooms
Slices of Swiss Cheese
1 Onion
1/2 LB Bacon
A1 Steak Sauce
Lee Pearson's Worshire Sauce
Lettuce
Tomato Slices
Directions
1-Lightly Toast Burger Buns.
2-Place Meat In Large Mixing Bowl.
3-Cut Onion In 1/2
4-Take one half of onion and chop finely.
5-Place Chopped Onion in Mixing Bowl with Horse Meat.
6-Take other half of onion and Slice Onion Slices.
7-Take 1/2 Cup Of Lee Pearson Worshire Sauce A Place In Mixing Bowl.
8-Knead, and Mix Meat, Onion, & Sauce.
9-Form Medium Thickness Horse Meat Patties Out Of Mixture & Cook.
10-Saute' Onion Slices & Mushrooms On Stove Top.
11-Place Meat Patties On Bun & Top With Onion Slices, & Other Ingredients.
12-Top inside of bun with mayonnaise, and A1 sauce.
